Honey Butter Biscuits

These fluffy biscuits with a honey butter glaze are a weekly staple in our home! The Greek yogurt keeps them moist and delicious.

Equipment

Ingredients

  • 2 cups soft white wheat flour 240g
  • 1/4 tsp baking soda
  • 1 Tbsp baking powder
  • 1/4 cup butter COLD
  • 1 cup greek yogurt
  • 1 tsp salt

Honey Butter Glaze

  • 2 Tbsp butter melted
  • 2 Tbsp Honey

Needed for cast iron

  • 2 Tbsp butter melted in bottom of pan

Instructions

  • Preheat oven to 375 degrees ℉
  • Sift all dry ingredients into a small mixing bowl. This will aerate your flour, but you will want to add the bran back into your dry ingredients.
  • Next, add the Greek Yogurt to the dry ingredients. Using a rubber spatula, press and stir the yogurt into the flour, until there is no visible yogurt.
  • Finally, grate your COLD butter into the bowl with the flour and yogurt. With your hands, press and knead the butter into the dough. Do not over mix the dough. Leave small flecks of butter visible.
  • Dump your dough onto a silicon mat or similar surface. Roll out your dough until 1" thick. Take your 3" biscuit cutter and cut circles out of the dough. Press any scraps together and roll out again. Repeat until dough is all rolled out. Do not over knead the dough, simply press together.
  • Bake the honey butter biscuits for 10-12 minutes.
  • While the biscuits bake, add the butter and honey for your glaze to a small sauce pan and melt on the stove.
  • Remove the baked biscuits from the oven and immediately brush with the melted honey butter.
