Fresh Milled Hard White Wheat makes this hamburger bun hearty and nutrient dense. When utilizing the whole grain, you will harness the fiber, healthy fats, protein, minerals, vitamins that store bought flour lacks.

  • Fresh Milled Hard White Wheat
  • Full fat, 4% Cottage Cheese
  • Baking Powder
  • Salt

How To Make Cottage Cheese Hamburger buns

These are surpisingly simple and easy to make for a weekday cookout.

Start by milling your wheat, I love my Nutrimill grain mill but there are a ton on the market today! You could substitute spelt, einkorn, hard red wheat or a blend for this recipe. I like the harder wheats as it provides a strong gluten structure in my bread products.

Add all of your ingredients to a stand mixer fitted with a paddle (or roller attachment if you are using an Ankarsrum)

Scoop the dough onto a flour dusted counter and divide into 4 equal sections of dough. I use these dough scrapers for removing bread from bowls, dividing dough and scraping counters! They are inexpensive and a lifesaver.

The dough is very sticky, so I use quite a bit of flour to get it shaped.

These hamburger buns will shrink up some in the air fryer, so you want to make sure you make the diameter slightly larger than you need it to be for your hamburger patties. Roll each section of dough into a tight, smooth ball and then flatten until they are about a little less than an inch thick. They will shrink when baking, so make sure they start out slightly larger than needed to accommodate the patty size.

Brush with an egg wash and then sprinkle with sesame seeds or your favorite bun topping.

Place these in your air fryer at 375 degrees F for 15 mintues.

Always allow any bread you made to cool before cutting into. They will cut better as well as lock in the steam and make for a better textured bread. I do not split mine until I am ready to eat them. You can butter and toast them if you like a burger on a toasted bun.

Store in the fridge for a week or freezer for 3 months!

These can be stored in the refrigerator for up to a week. Because these lack preservatives, you want to be careful to not expose your buns to dirty hands or knives which will cause premature mold!

YES! Store in a freezer bag for up to 3 months and thaw in the fridge or toast.

Ingredients
  

Egg Wash

  • 1 egg
  • 2 TBSP water

Other topping options

  • 2 Tbsp Seasame seeds
  • 2 Tbsp Everything bagel sesasoning

Instructions
 

  • Weigh and mill your wheat berries
  • In a stand mixer, add all ingredients and mix just until combined. If you do not have a stand mixer, you can also make this using a bowl and pastry cutter or fork. I mix until the cottage cheese curds are broken down smaller than their original size, but still visible.
  • Scoop dough onto a clean, flour dusted, surface and divide into 4 equal sections.
  • Take each section of dough, and roll into a smooth, tight ball. Flatten each ball until they are a round pancake shape, approximately an inch thick. They will puff up during baking so you want to make sure you make the diameter slightly larger than needed to fit your hamburger patty on once baked.
  • Make an egg wash with your egg and water, and brush the top of your buns with a pastry brush. Sprinkle the top with sesame seeds, Everything bagel seasoning, or any other topping. You can also leave them plain if you prefer.
  • Line your air fryer with a piece of parchment.
  • Bake at 375℉ for 15 mintues
  • Allow to cool completely before splitting
