I’m Krista Bailey, and I’m here to show you that baking with fresh-milled flour is both healthy and simple. My journey started in professional pastry kitchens, but it evolved when I discovered the incredible flavor of home-milled grains. Now, I spend my time at Bailey Basics developing tested recipes that help home bakers master everything from soft sandwich bread to high-protein flatbreads.
Baking with fresh flour that utilizes the grain in its entirety was never on my radar when I owned a commercial bakery. With my background as a professional pastry chef, I know what light fluffy flavors we have grown accustomed to as a society and have found ways to have the most success with whole grain flour.
When it comes to recipe creation, I am first and foremost a busy mom of 3 kids with a Fire fighter husband who works outside the home for long hours. I do not have time to create complicated dishes that leave me in the kitchen all day every day.
