Sausage Balls made with Fresh Milled Flour

We love how simple these Sausage Balls are. It allows me to make them weekly and keep the freezer stocked.

Ingredients

  • 5.5 oz Soft white wheat
  • .5 oz baking powder 4 tsp (1 Tbsp + 1 tsp)
  • .1 oz Redmond's Real Salt 1/2 tsp
  • .5 oz sugar 4 tsp (1 Tbsp + 1 tsp)
  • 1 pound ground pork sausage
  • 1 pound sharp cheddar
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • 1 tsp Parsley dried
  • 1 egg

Instructions

  • Preheat oven to 375 degrees F.
  • Mill the Soft White Wheat berries into flour.
  • Cut cheese into small sections in order to press into the food processor and grate.
  • Add shredded cheese and sausage to the mixer fitted with a roller (Ankarsrum) or Paddle (KitchenAid).
  • Mix until cheese and sausage form one cohesive mixture.
  • In a separate bowl, combine flour, baking powder, sugar, salt, garlic, onion and parsley. This is the base for my Pancake recipe.
  • Slowly sprinkle in the flour to the sausage and cheese mixture.
  • As the mixture begins to come together, add your egg.
  • Once you no longer see any egg in the mixture, it is complete.
  • Using a 2 Tbps cookie scoop, scoop your mixture, level off the top of the scoop and place on a parchment lined pan, approximately 1 inch apart.
  • Bake for 20-25 minutes
  • Enjoy warm out of the oven or allow to cool and place in an airtight container in the fridge for 3 days or freezer for 3 months.
