Sausage Balls made with Fresh Milled Flour

If there’s one thing you will find in my freezer year-round, it’s Sausage Balls. These are my favorite quick breakfast, full of protein and only needs a couple minutes to reheat. Last minute invite to a dinner party? Pull sausage balls from the freezer and reheat, you’re ready to go! When I switched my kitchen to fresh milled flour and did away with things like Bisquick, I had to find a new recipe.

Ingredients for Sausage Balls made with Fresh Milled Flour

  • ONE BATCH OF MY PANCAKE RECIPE: Dry Ingredients listed below
  • Soft White Wheat Berries-You can also use Einkorn, Spelt or Soft Red Wheat. Try different grains, you will be surprised which end up being your favorite.
  • SaltRedmond’s Real salt is all I use!
  • SugarCoconut Sugar or Cane Sugar
  • Baking Powder
  • Baking Soda
  • Sausage-Ground breakfast sausage
  • Cheddar Cheese-use a block and shred. Pre-shredded cheese has a coating on it and it will not melt the same
  • Egg
  • Garlic-granulated
  • Onion– Powder
  • Parsley– dried

Equipment needed for Sausage Balls made with Fresh Milled Flour

  • Grain Mill
  • Food Processor-fitted with a grater attachment or a cheese grater will work
  • Stand Mixer-could be mixed by hand, it does take a while
  • Cookie Scoop-2 Tbsp size
  • Measuring Spoons
  • Sheet Pans-2
  • Parchment Paper

How to make Sausage balls with Fresh Milled Flour

  1. Preheat oven to 375 degrees F.
  2. Mill the Soft White Wheat berries into flour.
  3. Cut cheese into small sections in order to press into the food processor and grate.
  4. Add shredded cheese and sausage to the mixer fitted with a roller (Ankarsrum) or Paddle (KitchenAid).
  5. Mix until cheese and sausage form one cohesive mixture.
  6. In a separate bowl, combine flour, baking powder, baking soda, sugar, salt, garlic, onion and parsley. This is the base for my Pancake recipe.
  7. Slowly sprinkle in the flour to the sausage and cheese mixture.
  8. As the mixture begins to come together, add your egg.
  9. Once you no longer see any egg in the mixture, it is complete.
  10. Using a 2 Tbps cookie scoop, scoop your mixture, level off the top of the scoop and place on a parchment lined pan, approximately 1 inch apart.
  11. Bake for 20-25 minutes
  12. Enjoy warm out of the oven or allow to cool and place in an airtight container in the fridge for 3 days or freezer for 3 months.

Frequently asked questions about Sausage Balls with Fresh Milled Flour

Can I freeze them before baking?

Of course. After scooping, you can flash freeze and then place in an airtight container for 3 months. I prefer to freeze AFTER baking, simply so my reheat time is only 5 minutes. If you freeze raw, allow to thaw before baking the full 20-25 minutes.

Can I substitute for different cheeses?

Yes! We love Pepperjack as well. You still want to make sure you are not using pre-shredded cheese and always a block you shred yourself. I have not tried this with any hard cheeses, but suspect the lack of moisture would greatly affect the recipe.

Can I use Turkey Sausage?

I believe it would work. With the caviat that the reduction in fat will certainly affect the texture. That being said, you may want to reduce the amount of pancake mix you use and consider increasing the cheese or amount of eggs.

Tips and Tricks:

I keep pre-measured pancake mixes in the freezer so I can have breakfast and other recipes like this ready in a short amount of time.

Adjust the seasoning how you would like, I think this tastes alot like the cheddar bay biscuits

My family and I loved this sausage ball recipe. The freshly milled flour and seasoning portion took no time to put together. I love the idea of being able to replace the store bought bisquick with a nutritious alternative.
