Berry Oat Bars

These Berry Oat Bars can be mixed up in under an hour and you’ll be out the door on the way to the neighborhood BBQ. Summer is for cookouts, good food and spending time with family and friends. This is one of my recipes I have printed and ready for those last minute invites. I dump a couple bags of frozen fruit in a collander, turn the oven on and before you know it, the house is full of the sweet aroma of nutty oats and bubbly berries.

Ingredients for Berry oat bars

If you’re looking for a delicious dessert, these Lemon Bars are the perfect choice! I love the combination of tart berries with the sweet oat crust and crumble. The lemon zest and juice really brightens the flavors and creates a depth you didn’t know you were missing.

Why these are so simple:

  • They use frozen berries, any frozen berries will work. Sometimes when I’m cleaning out my freezer I will have a small amount of a lot of different berries and this is a great way to use some of those up!
  • They freeze great! Most of my recipes I need to be able to make in bulk and freeze. I have 3 kids and tons of their friends over constantly, and with that many mouths to feed, I want to always be prepared. I store in a glass container layered with parchment paper in the freezer and pull a few at the first sign of company. They thaw in about 20-30 minutes.
  • AMAZING both hot and cold! These are so refreshing on a hot day at the pool right out of the cooler. It also feels like a totally different dessert scooped hot out of the pan and topped with a scoop of vanilla bean ice cream.
  • If you’re new to fresh milled flour, this recipe is also a great transition dessert. For those kids that aren’t completely on board with this new style of baking, the oat and brown sugar crumble really compliment the “whole grain” flavor that some people may still be adjusting to.

Ingredients for Berry Oat Bars

Crust and Topping

  • Rolled Oats-not instant
  • Fresh milled soft white wheat. You can use spelt, einkorn, khorasan or any low protein wheat flour here. Store bought pastry flour works as well.
  • Brown Sugar
  • Butter-unsalted or salted
  • Salt
  • Baking Powder

Filling

  • Frozen berries-I used a strawberry, blackberry and blueberry blend. You can use just one berry or any blend. You may need to adjust sugar if it is a more tart fruit, but otherwise follow the recipe as written.
  • Granulated sugar
  • Flour-fresh milled soft white wheat or whichever grain you chose for the crust. Again, store bought flour would work here too.
  • Lemon zest and juice

Equipment needed for Berry Oat Bars

  • Grain Mill: If you are just starting out, HERE is a post to help you select a mill.
  • Digital Scale
  • Measuring spoons
  • Rubber Spatula or wooden spoon
  • 1 Large mixing Bowl
  • Collander
  • 1 Medium mixing Bowl
  • Fork
  • Microplane
  • 9″x13″ casserole dish (double batch)
  • Parchment Paper for lining pan

Let’s Bake Berry Oat Bars

Oat Crust and Crumble
  • PREP YOUR FRUIT: The very first thing I do is pour 2-12oz bags of frozen fruit into a collander and rinse with warm water. I let them drain for at least 30 minutes
  • Preheat oven to 350 degrees F.
  • MAKE YOUR CRUST: Mill your wheat and set aside.
  • In a large mixing bowl add your oats, flour, salt, baking powder. Pour melted butter over the dry ingredients.
  • Mix with a wooden spoon or rubber spatula until well incorporated
  • Take a 9″x13″ baking dish and line with parchment paper. The paper should go up the sides of the pan enough to cover the pan when the filling and crumble topping are added.
  • Dump 2/3 of the oat and flour mixture into the bottom of the prepared baking dish. Using your hands, press the crust into the pan making sure it is the same thickness throughout the entire pan. Reserve the remaining 1/3 for the crumble topping.
  • Place into your preheated oven and bake for 10 minutes
  • MAKE FRUIT FILLING: Mix fruit, sugar, flour, lemon juice and zest in a medium bowl. Using a fork, mash the fruit against the side of the bowl to soften and make smaller pieces of fruit. Make sure the flour is incorporated and no large white chunks remain.
  • FINISH BERRY OAT BARS: After crust bakes for 10 minutes, pour the fruit mixture onto the crust. Crumble the remaining 1/3 oat and flour mixture on top of the fruit. Bake for 25-30 minutes. You want to see the fruit bubbling up through the crumble.
  • SERVING: If you want to serve these as a “bar” you will want to let them set up for atleast 1 hour. Pop them in the fridge or freezer to cool them off for the 1 hour. Or, you can cut them right away and serve as a warm cobbler crumble!
  • STORAGE: After cutting, place them in an airtight container. Store in the refrigerator for 3-5 days or freeze for up to 3 months.

Raspberry Filling

  • 2-12 oz bags of frozen berries

  • 1/4 cup soft white wheat flour 30 grams

  • 240 g rolled oats 3 cups
  • 360 g soft white wheat flour 3 cups
  • 400 g brown sugar 2 cups
  • 1 tsp baking powder
  • 3 sticks melted butter 1 1/2 cups
  • 1/2 tsp salt

Can I freeze the Berry Oat Bars

I actually keep these in my freezer all spring and summer as a go-to for last minute party invites. They freeze great and I just pull them and place them on my serving dish to thaw.

Can I make any part of this recipe ahead of time?

f you are short on time, you can make all components of the recipe and place in the refrigerator. Although, I have found the best way to save time on this recipe is to go ahead and bake it and let it sit in the fridge or freezer until I am ready to serve.

Can I use fresh fruit?

You can, however the texture is a little softer and they don’t seem to hold together as well. Mill your wheat and set aside. It is also quite a bit more expensive to use fresh fruit for this recipe, but it can be done! I would recommend adding an additional TBSP of flour to the berry mixture.

    These are so quick and easy! I warmed the leftover bars and served them with ice cream! Everyone loved them and thought I had made a different dessert.
