3 Simple Dinners with Fresh Milled Flour Recipes

With kids and our busy schedules, weeknight dinners are always top of mind and these 3 simple dinners are our favorites.

Coming from a long background in food service, I have learned alot of tricks for prepping in bulk, freezing and finishing when we are ready to eat. These short cuts have served me well over the years as my family has grown but my desire to cook healthy from scratch meals has not been one of the corners I’m willing to cut.

If you have done many of my recipes you will see I do not just write a recipe for 1 serving or 1 loaf of bread. Because they are written in weights, they are easy to scale back or even increase. If I am going to bake bread, I want 4 loaves and I want to pre-slice and freeze any that I can’t eat right away. This is just how my brain works, but it sure is handy when we get busy.

Our favorite week night dinners!

Simple dinners are the best way to eliminate stress and free up time to spend with family.

Pizza: This crust recipe makes 3 LARGE pizzas. Consider these other options with the dough:

  • Calzones: Make small dough balls, allow to proof as directed and then flatten into smaller disks. Fill with pizza toppings and fold over, sealing edges. Bake and enjoy. These freeze well too for an even quicker weeknight meal.
  • Breakfast calzones: Fill with scrambled eggs, sausage, bacon, veggies and cheese for a quick breakfast idea!
  • Pizza “cinnamon roll”: Flatten dough out and and smear with pizza sauce, cheese and toppings. Roll up just like a cinnamon roll, slice and place on a pan to bake like cinnamon rolls. Top with additional cheese or marinara.

Pot Pie with Drop Biscuits:

  • You can do these biscuits on any of your favorite casseroles and make them extra yummy!
  • These biscuits are also great made in a buttered cast iron, baked and then coated with the herbed butter topping. Tastes just like cheddar bay biscuits.

Baked Sandwiches with Dinner Rolls:

  • These are so delicious using any of your favorite baked sandwich recipes!
  • When I want to use these rolls like a package of hawaiian rolls in a baked sandwich, I bake them closer together in an 9×13 lined pan so they proof up and not out as much.
  • We also do BYOS (build-your-own-sandwich bar) for dinner often!

FAQ for Simple Dinners

When using the pizza crust for calzones, can I freeze them before baking?

This is actually my FAVORITE way to stock the freezer! I will assemble my calzones and flash freeze them. Meaning, I simply put them on a parchment lined pan in the freezer and allow to freeze uncovered. Once frozen, I will move them to plastic bags and freeze. When I’m ready to bake them, I place on a parchment lined pan and allow to thaw and proof approximately 2 hours. It depends on how much filling I put in my calzone as to how long I let it thaw. You want to give the outside crust time to thaw and begin proofing before baking.

Can I use the drop biscuits by themselves?

If you are a fan of cheddar bay biscuits, you will love this biscuit recipe. I will melt butter in a cast iron skillet and scoop my biscuits directly into the pan. Bake and coat with the herbed butter topping. AMAZING! They are so good!

Do I need to make any adjustments to the roll recipe if I am going to use as a baked sandwich?

Nope! I follow my roll recipe like normal. When I bake, I do make sure they are baked in a 9×13 pan placed close together so they bake tall and fluffy. This also helps me split them like the packaged hawaiian rolls from the store.
