Pancake and Waffle mix

This is our substitute for Bisquick. There are a few recipes you can use this mix for including pancakes, waffles and sausage Balls!

Fresh milled flour pancakes

Pancakes:

  • 1 package mix
  • 1 cup of milk
  • 1 egg
  • 2 Tbsp melted butter
  • 1 tsp vanilla extract

Whisk together and allow to rest 5-10 minutes while your skillet heats up. Whole wheat flour is THIRSTY, you will have a softer pancake if you allow time for it to absorb liquid and soften the bran and germ.

Waffles:

  • 1 package mix
  • 1 cup of milk
  • 2 eggs
  • 2 Tbsp melted butter
  • 1 tsp vanilla extract

Sausage Balls made with Fresh Milled Flour

Sausage Balls:

  • 1 package mix
  • 1 pound ground pork sausage
  • 1 pound sharp cheddar
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • 1 tsp Parsley dried
  • 1 egg
  • Cut cheese into small sections in order to press into the food processor and grate.
  • Add shredded cheese and sausage to the mixer fitted with a roller (Ankarsrum) or Paddle (KitchenAid).
  • Mix until cheese and sausage form one cohesive mixture.
  • Slowly sprinkle in the Pancake Mix to the sausage and cheese mixture.
  • As the mixture begins to come together, add your egg.
  • Once you no longer see any egg in the mixture, it is complete.
  • Using a 2 Tbps cookie scoop, scoop your mixture, level off the top of the scoop and place on a parchment lined pan, approximately 1 inch apart.
  • Bake for 20-25 minutes
  • Enjoy warm out of the oven or allow to cool and place in an airtight container in the fridge for 3 days or freezer for 3 months.
