
Pancake and Waffle mix
This is our substitute for Bisquick. There are a few recipes you can use this mix for including pancakes, waffles and sausage Balls!

Pancakes:
- 1 package mix
- 1 cup of milk
- 1 egg
- 2 Tbsp melted butter
- 1 tsp vanilla extract
Whisk together and allow to rest 5-10 minutes while your skillet heats up. Whole wheat flour is THIRSTY, you will have a softer pancake if you allow time for it to absorb liquid and soften the bran and germ.

Waffles:
- 1 package mix
- 1 cup of milk
- 2 eggs
- 2 Tbsp melted butter
- 1 tsp vanilla extract

Sausage Balls:
- 1 package mix
- 1 pound ground pork sausage
- 1 pound sharp cheddar
- 1 tsp granulated garlic
- 1 tsp onion powder
- 1 tsp Parsley dried
- 1 egg
- Cut cheese into small sections in order to press into the food processor and grate.
- Add shredded cheese and sausage to the mixer fitted with a roller (Ankarsrum) or Paddle (KitchenAid).
- Mix until cheese and sausage form one cohesive mixture.
- Slowly sprinkle in the Pancake Mix to the sausage and cheese mixture.
- As the mixture begins to come together, add your egg.
- Once you no longer see any egg in the mixture, it is complete.
- Using a 2 Tbps cookie scoop, scoop your mixture, level off the top of the scoop and place on a parchment lined pan, approximately 1 inch apart.
- Bake for 20-25 minutes
- Enjoy warm out of the oven or allow to cool and place in an airtight container in the fridge for 3 days or freezer for 3 months.
