These Ultimate Bacon Cheddar Scones hit the spot for a delicious breakfast or mid day pick me up. They are salty, savory and oh so filling. Don’t get me wrong, I love a sweet scone drizzled with a glaze, but this one hits different.

Ingredients Needed for Bacon Cheddar Scones
-Hard White Wheat flour
–Cheese-I used extra sharp cheddar. Always grate your own cheese and do not use pre-shredded cheese. These have coating to prevent caking in the package, and will affect your recipe. Feel free to try your other favorite cheeses.
–Bacon-This recipe calls for 1/2 pound of bacon. Usually 8-10 pieces of bacon.
–Green onions or chives. Green onions have quite a bit more moisture than chives, while chives have a more concentrated flavor.
–Heavy Cream-You can also use milk, but the lower fat option will affect the flavor and flakiness.
–Sugar-I always use coconut sugar as my preferred sweetener.
–Salt
–Butter-I use unsalted butter in baking to control the salt in my recipes. Make sure your butter is COLD when you add it to the recipe.
–Egg and water for egg wash

I always have a road block when it comes to creative breakfast ideas that are quick, easy and still nutritious. These Bacon Cheddar Scones were enjoyed by the whole family and a huge hit when invited to a girlfriends for brunch.

How to make Bacon Cheddar Scones!
- Start by cooking your bacon, either in the oven or on the stove top until crispy.
If baking, place in a 400 degree oven for 20 minutes. I like to bake on a parchment lined or wire rack topped sheet pan.

Place cooked bacon onto a paper towel lined glass plate after cooking.
2. Next, mill hard white wheat berries into flour and set aside to come to room temperature.
3. While the flour is cooling from milling, you can chop your bacon, onions/chives and grate your cheese.
4. To the bowl of cooled flour, add salt and baking powder, stir to combine. Add cubed butter, which should be VERY cold. Using a pastry cutter or 2 forks, cut the butter into the flour mixture until you have a crumbly mixture. Mix in shredded cheese, chives/onions and crumbled bacon. Pour in the cream and gently mix with a spatula or wooden spoon until dough forms, do not over mix.
5. This next step can be completed a couple of different ways. I prefer to take a large sheet of parchment, placed into a 9″ round cake pan. Press my dough down into the pan to form a perfect circle. You can also free form the circle directly onto the parchment lined sheet pan.

6. When the dough is formed into a circle, you are ready to cut into 8 equal triangle wedges. Take your chef knife and dip the blade in a little bit of flour to prevent sticking.
7. Place the Bacon Cheddar Scones onto the parchment lined sheet pan, leaving a couple of inches between each. If the butter chunks have gotten warm, place the pan in the refrigerator for 20 minutes to chill.
8. Mix the egg and water to create an egg wash. Brush over the top of the scones before baking.
9. Bake scones for 20-25 minutes, until the tops are golden brown. These are best served right out of the oven, so enjoy your Bacon Cheddar Scones warm!

10. Store in an airtight container in the refrigerator for up to 3 days, or freezer for 3 months. Place in the airfryer for 5-7 minutes to reheat or the microwave for 1 minute.
FAQ for Ultimate Bacon Cheddar Scones
What will be the difference between green onions and chives?
The recipe for Bacon Cheddar Scones is ideally done with chives! The green onions tend to contain too much moisture. I have used green onions, and I did not notice a drastic difference in texture. If using green onions, do not use the white portion of the onion, only the dark green tips.
If I need to prepare ahead of time, how should I do this?
If you are needing to prepare the Bacon Cheddar Scones the day before eating, I recommend making the dough up to the point of baking, wrap with plastic wrap and refrigerate over night until needed. The following day, when ready to complete, pull the scones from the refrigerator when you preheat the oven, brush with egg wash and bake.
Can these be made dairy free?
These Bacon Cheddar Scones can be made dairy free with just a few substitutions. If you substitute the butter, cheese and heavy cream with your favorite dairy free substitute, this recipe will be dairy free!
