“Ditch That” Series, Replacing Pantry Staples with Fresh Milled Flour Recipes

This Ditch That series is the order I replaced every pantry item and recipe in my kitchen when switching to using only fresh milled flour. When I first learned about the health benefits of Fresh Milled Flour, I wanted to throw everything in my pantry and fridge away that had store-bought flour in it. Then I remembered how frugal I was and decided to slow down and as I ran out of something, I wrote a recipe to replace it. You don’t have to make the transition over night, but here are a few recipes to help you along the way.

These recipes as well as the instructional videos and tips will help make cooking from scratch and using fresh milled flour just as convenient as the inferior short cuts and mixes. Ditch That-Bisquick in Pancakes
You cannot go wrong with this recipes. It is simple for beginners, can use any grain and is one of my familyโ€™s favorites!
I love to make pre-measure the dry ingredients out and portion them into one recipe bags. Then, I freeze them! All I have to add is the milk, butter, eggs and vanilla and I have pancakes for a busy school-day breakfast!

Either of these are great options to replace the store-bought version that is made with bleached, enriched flour and a long list of additives and preservatives you may or may not be able to pronounce!

Honey Butter Biscuits
Ditch That-Canned Biscuits
Everyone loves a good bisuit. Achieving that flaky, fluffy texture can often be a challenge. These biscuits are simple, the recipe forgiving and flavor unmatched. If youโ€™re still adjusting to the flavor and texture of Fresh Milled Flour, this recipe is as close to conventional white flour as Iโ€™ve found.
This recipe uses Greek Yogurt (or Sour Cream) which helps hydrate the flour and add a creaminess to the texture.
I also sift my dry ingredients just to aerate the flour. I still add the Bran and germ back into the recipe, but this quick step will help your biscuits rise.
Also, COLD butter is the key. I pop my stick in the freezer while I gather my ingredients and mill my flour. I also let my flour cool off after milling, as it can be warm.

I started this series when I realized how overwhelmed people were feeling about the transition to Fresh Milled Flour. I felt it too when I started. Truthfully, I was already making most things from scratch at home, but even just the thought of finding all new staple recipes using Fresh Milled Flour, when I had worked YEARS to perfect the onces I was using, was beyond overwhelming. It was honestly easier than I thought to switch my recipes over, but I think it is because I started with recipes written for Fresh Milled Flour first, and learned more about the grains and how they SHOULD look when the recipe is done right.
